Potato starch is a type of resistant starch, which is a great source of dietary fibre and prebiotics. Prebiotics act as fuel for our gut bacteria and are important for the health of our digestive system.

This starch can be used in baking, improving the texture and adding moisture to the end product. For this reason, it's a great product to incorporate into gluten free baking.

Potato starch is also a natural thickener, making it great for thickening soups and sauces. It's an alternative to corn starch and can be used in all the same ways. If substituting corn starch for potato starch, it can be done so in a 1:1 ratio.
